Savory kale quesadilla, quick HIIT home workout, and a great home date night idea

Kale. It’s so hot right now.

And arguably the heathiest food in the solar system- unless Elon Musk’s Tesla robot identifies a new form of greenery on Mars, there are few foods that can surpass it in nutrient density.

There’s even some research that it strengthens our immune systems to help us better ward off illness. Excellent news for flu season!

I recently bought a bag of it larger than your head. No really. It’s the biggest bag of kale I’ve ever seen.

And my mission was to house it all.

There was kale, sweet potato, carrot, broccoli, and tofu teriyaki bowls. Then came kale, blueberry, flaxseed protein smoothies, and kale and hummus sandwiches, kale and pecan salad with pears and chickpeas, and kale and quinoa in various forms of exquisiteness.

And the most delicious of them all…

Kale quesadilla (applause).

I love quesadillas. You can fill them with anything, lightly toast them in a non-stick pan, and bam. Dinner. This quesadilla is also vegan, but you can choose to add cheese as an added binder if you like. vegan kale quesadilla

I was feeling spicy so I decided on a Mexican-inspired kale, black bean, and purple cabbage quesadilla with sweet chill sauce and red pepper flakes.

It was super nom nomable. And quick too! Which was fabulous since I wanted to squeeze in a workout before trivia date night with Dr. P.

Trivia date night was not well planned, by the way, but it turned into a fantastic date!

Apparently, you have to reserve spots about a year and a half in advance to play trivia around here? My theory is that this area is crawling with fun and flirty twenty-somethings.

Here’s what went down (excuse the lack of brevity):

We loaded baby bee in the car while it was raining and drove to trivia night.

We walked in, discovered a baby in a busy bar with no available tables feels like a moderate to really bad idea. Reloaded baby in car.

Googled/called other bars hoping something else has available tables for trivia on a Tuesday night in a preferably quiet locale and corner booth (tall order, I know).

Cruised around while calling bars, failed x 3 times on finding reasonable solution, and decided to just buy beer at local beer store.

Found best beer ever (see below), and drove home, unloaded baby, put baby to bed, and soon discovered there is a trivia option called “Song Quiz” on our Amazon Echo.

It lets you choose what decade of music, plays a brief clip of a song, and you have to guess name of song and artist.

Thus began most rousing home date night of all time.

Now here’s the bangin’ quesadilla recipe:

Savory kale quesadilla

Savory kale quesadilla

Ingredients

  • 1 can black beans, rinsed
  • 1 cup shredded purple cabbage (bagged variety is easiest)
  • 1 cup chopped kale (chop even more finely than already chopped variety)
  • 1-2 tbsp. sweet chili sauce
  • whole grain tortillas
  • red pepper flakes (optional. I like spice!)

Instructions

  • Place non stick pan on oven on medium to heat up
  • Grab medium bowl.
  • Open can of beans, rinse beans in colander.
  • Toss beans in medium bowl. Toss cabbage and kale on top.
  • Pour sweet chili sauce and spices in bowl.
  • Mash it all up with potato masher so it all sticks together. Add more sweet chili sauce if needed
  • Layer mixture on whole grain tortilla and spread out to reach sides. Place other tortilla on top.
  • Place in hot pan and heat 2-4 minutes on each side. Longer if needed depending how hot your oven gets.
  • Allow to cool. Cut into quarters. Enjoy with cilantro, avocado, and salsa! Nom noms!

This recipe is PACKED with fiber!

Black beans provide a whopping 29 gms per cup and the veggies add another 4 gm- so if you aren’t used to eating a lot of fiber, drink extra water. Your body adjusts to higher fiber intake in time.

Gassiness is a result of a low fiber diet typically. Eat more fiber, over time you will not only have a slimmer waistline, you will have less gas too!
